Bell's Tomato Risotto

“Even during winter we miss the wonderful combination and flavors of saffron and tomato. Luckily tomato jam is a year-round product and a great alternative to fresh tomato. The colors even allow for it to be festive during the holiday season.  Another important element of this dish is having really good olive oil.  We are fortunate enough to have our local olive oil producer, Inez Olive Oil.  They have only been making olive oil for a short time now but the quality and flavor makes it a huge part of making this dish wonderful.”
